   Abstract

Few people understand the talent and painstaking effort required to craft chocolate that is the equivalent of fine wine. During this talk, we will learn about a few of the complex steps that cacao needs to undergo to unlock the flavor potential that can manifest in the final bar. The talk will be followed by a taste of a few small batch chocolates made by some of the best makers in the world.

   Bio for Sunita de Tourreil

Sunita was trained as a molecular biologist at McGill University. She then worked on the genetics of Wilms’ Tumour followed by the detection of prions in humans. In 2004 she found herself pursuing work that aligned all of her interests and passions: delicious food, people, justice, responsibility, poverty and discovered that through chocolate we have the power to create the change we want to see!

In 2004, Sunita left UCSF where she was leading a Clinical Research team headed by Stanley Prusiner, awarded a Nobel Laureate for his defining prions, the protein that cause Creutzfeldt Jakob Disease. Sunita started on a path that led her to work with chocolate in order to create change from the grassroots up, by engaging the local community through Happy Chocolate.

The Chocolate Garage is a thriving community of chocolate aficionados primarily in the Palo Alto area, but with an expansive view for sharing and building community elsewhere. The Chocolate Garage is truly a social enterprise that is connecting the supply chain, from tree to taster, growing and creating a market for chocolate that is both high quality AND creating positive change in cacao farming communities.

   Note for Visitors to SRI

Please arrive at least 10 minutes early in order to sign in and be escorted to the conference room. SRI is located at 333 Ravenswood Avenue in Menlo Park. Visitors may park in the visitors lot in front of Building E, and should follow the instructions by the lobby phone to be escorted to the meeting room.
